Everyone love muffins, but most of us really hate the mess. However, with your toaster oven you can create yummy muffins in no time.

For basic muffins, you will need:

• 1 cup self-raising flour
• 1/2 cup 2%, skim milk, or whole milk according to taste or diet
• 2 Tablespoons cold sour cream
• ½ to ¾ cups of sugar

You can also add such items as:

• ¼ to ½ cup of your favorite fruit
• Cinnamon
• ½ cup of applesauce
• Pecans, walnuts, or your other favorite nuts
• ¼ to ½ cup of chocolate chips

Turn on toaster oven to 450º Fahrenheit. Put all ingredients into a medium bowl and mix thoroughly. Line muffin tins with cupcake holders to make clean up easier. Fill each with 2/3 full of dough. Put in toaster oven and bake until brown and knife comes out clean, about 10-15 minutes. This will make six muffins.
