The original Boston Parker House Hotel Rolls, circa 1860, were folded with a pat of butter tucked in the fold. Competitors, in an effort of one-upmanship, adopted a fancier cloverleaf shape but kept the same rich, buttery texture. These heritage rolls are based on an 1867 recipe with which we took the liberty of adding the tang of buttermilk. You will find the buttermilk to be the perfect touch for these slightly crusty, light, brioche-like rolls.

If you make this bread in your bread machine, water temperature is critical. Please use a thermometer to measure water at exactly 80 degrees. A ten degree difference in water temperature can double the growth rate of the yeast. These bread mixes are satisfaction guaranteed when you use a thermometer.
