Because rye flour does not have the gluten needed for breads, we have blended in just enough wheat gluten. Dark rye flour is flour that still has most of the bran and germ. The bran leaves the flour darker just as the bran in wheat flour makes for brown bread. Still, to get the dark color of many rye breads, molasses, caramel color or even cocoa is added.
This blend works especially well in dark rye breads and will produce excellent results in many recipes.
