Recipe For Cooking Baked Caramel Corn

Baked Caramel Corn1 C. butter or margarine 2 C. brown sugar, packed 1/2 C. light or dark corn syrup 1 tea. salt 1/2 tea. baking soda 1 tea. vanilla extract or flavoring 6 qt. popped popcorn, unsalted Melt butter. Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Boil without stirring for 5 min. Remove from heat. Stir in baking soda and vanilla extract or flavoring. Gradually pour over popped corn, mixing well. Turn into 2 lrg. shallow baking pans. Bake at 250 degrees F for 1 hr., stirring every 15 min. Remove from oven; cool completely. Break apart. Makes approximately 5 qt..
