Anchorage Baked Salmon2 lrg. onions 2 C. water 2 C. tomato juice 1 Tbsp. catsup 1/2 C. brown sugar, packed 1/2 C. vinegar 2 Tbsp. Worcestershire sauce 1 tea. garlic salt 1 tea. chili powder 2 bay leaves 4 whole cloves 4 (8 oz.) salmon steaks Cut onions into 1/2-in. slices, and separate into rings. Combine onion rings and water in a saucepan; bring to a boil over med. heat. Reduce heat, and simmer, uncovered, 20 min. Add tomato juice and next 8 ingredients, stirring well; simmer 1 hr.. Remove and discard bay leaves and cloves. Set sauce aside. Brown salmon steaks on both sides in a lrg. nonstick skillet. Place salmon in a 13 x 9-in. baking dish. Pour sauce over salmon, and bake at 350 degrees F for 30 min. or until fish flakes easily when tested with a fork. Makes approximately 4 servings.
