Recipe For Cooking Banana Oatmeal Cookies
Toaster Oven Cookies :: Bar Cookies
Banana Oatmeal Cookies
2 C. sifted flour
1 tea. cinnamon
1/4 tea. nutmeg
1/2 tea. salt
1 tea. baking powder
1/4 tea. baking soda
1 C. sugar
1 C. soft vegetable shortening
1 C. mashed bananas (2 to 4)
2 eggs
2 C. uncooked rolled oats
1 tea. vanilla or 1/4 tea. banana extract or flavoring
Sift together flour, spices, salt, baking powder, baking soda and sugar. Add vegetable shortening, mashed bananas and eggs; beat until smooth (2 min.). Fold in the rolled oats. Divide the cookie dough into three parts.
For bar cookies, spread 1/3 of the dough into well-prepared 8-in. square pan. Bake at 375 degrees F for 15 min. Cool and turn out of pan. Cut into bars.
For drop cookies, drop by tea. onto prepared sheet.
For rolled cookies, add 1/4 C. flour; refrigerate overnight and roll out, cut into desired shapes.
Makes approximately 3 dozen lrg. cookies.
