Recipe For Cooking Raspberry Chip Brownies

Raspberry Chip Brownies

1 C. (2 sticks) unsalted butter
2 C. sugar
2 tea. vanilla extract or flavoring
4 eggs
1 C. flour
3/4 C. unsweetened cocoa powder
1/2 tea. baking powder
1 tea. salt
1/3 C. raspberry chocolate chips
1/2 C. miniature marshmallows

Preheat oven to 350 degrees F. Grease a 13 x 9-in. pan.

In lrg. bowl, melt butter. Stir in sugar and vanilla extract or flavoring. Add eggs one at a time, beating with a wooden spoon until glossy.

Into another bowl, sift together flour, cocoa, baking powder and salt. Add to butter mixture, combining well. Add raspberry chips; mix well.

Pour into prepared pan and press marshmallows into batter spaced 1 in. apart. Bake in preheated oven 30 to 35 min. Cool in pan on rack 2 hr..

Prepare frosting. Spread over brownie layer. Chill 30 min.

Prepare topping. Spread over chilled brownies. Chill 30 min. before cutting into squares.

Makes approximately 24 (2-in.) brownies.

Frosting
2 1/2 C. powderedsugar
3 Tbsp. milk
3 Tbsp. unsweetened cocoa powder
1/2 C. (1 stick) unsalted butter, room temperature
1/2 tea. vanilla extract

In bowl, beat together all ingredients until smooth.

Topping
1 C. Hershey\"s Special Dark chocolate chips
1 tea. unsweetened cocoa powder
6 Tbsp. (3/4 stick) unsalted butter

In sm. bowl or 2-c. glass measure, melt all ingredients together in microwave and stir until smooth.
