Bluegrass White Bourbon Frosting

1 1/2 c. sugar
1/3 c. plus 1 tea. water
1/8 tea. salt
1 Tbsp. bourbon whiskey
1 tea. lemon extract or flavoring
2 egg whites
1/4 tea. cream of tartar

Combine sugar, water and salt in a saucepan. Cook over med. heat, stirring until it reaches 240 degrees F on a candy thermometer. Stir in bourbon and flavoring. Beat egg whites until foamy. Add cream of tartar. Beat at med. speed, slowly pouring hot syrup over the whites. Beat at high speed until stiff peaks form.
