Apricot Pecan Tassies
1/2 C. plus 1 Tbsp. butter
(no substitutes, softened, divided
6 Tbsp. cream cheese, softened
1 C. flour
3/4 C. packed brown sugar
1 egg, lightly beaten
1/2 tea. vanilla extract or flavoring
1/4 tea. salt
2/3 C. diced dried apricots
1/3 C. chopped pecans
In a mixing bowl, cream 1/2 C. butter and cream cheese. Gradually add flour, beating until mixture forms a ball. Cover and refrigerate for 15 min.
Meanwhile, in a bowl, combine brown sugar, egg, vanilla extract or flavoring, salt and remaining butter. Stir in apricots and pecans; set aside.
Roll dough into 1-in. balls. Press onto the bottom and up the sides of prepared miniature muffin C. Spoon 1 tea. apricot mixture into each C. Bake at 325 degrees F for 25 min. or until golden brown. Cool in pans on wire racks.
Makes approximately 2 dozen.
