Recipe For Cooking Lemon Zest Cupcakes

Toaster Oven Cakes :: Cupcakes

Lemon Zest C.cakes

4 1/2 c. flour
3 c. sugar
1 1/2 c. solid shortening
1 1/2 c. milk
6 eggs
5 tea. baking powder
1 1/2 Tbsp. lemon juice
1 Tbsp. lemon zest

Preheat oven to 350 degrees F. Grease c.cake pans or line with paper liners.

In the bowl of electric mixer, combine all ingredients. Mix at low speed, then at high speed as flour becomes moistened. Beat until batter is creamy, about 2 min. Spoon batter into c. about 3/4 full. Bake for about 20 to 25 min. or until a wooden pick inserted in the center comes out clean and dry. Remove c.cakes from oven and allow to cool before icing.
