Recipe For Cooking Aloha Oatmeal Cookies

Aloha Oatmeal Cookies
1 1/4 C. firmly packed light brown sugar
3/4 C. Butter Flavor Crisco
1 egg
2 Tbsp. orange juice
1 Tbsp. grated orange peel
1 tea. vanilla extract or flavoring
1/2 tea. orange or lemon extract or flavoring
3 C. quick oats, uncooked
1 C. flour
1/2 tea. baking soda
1/2 tea. salt
1/2 tea. ground ginger
1 (8 oz.) can crushed pineapple in natural juice, well-drained
1 C. flaked coconut
1 C. chopped macadamia nuts
Preheat oven to 375 degrees F. Grease cookie sheets. Place foil on countertop for cooling cookies.
Place brown sugar, vegetable shortening, egg, orange juice, orange peel, vanilla extract or flavoring and orange extract or flavoring in lrg. bowl. Beat at med. speed of electric mixer until well blended.
Combine oats, flour, baking soda, salt and ginger. Add to vegetable shortening mixture; beat at low speed just until blended. Stir in pineapple, coconut and macadamia nuts. Drop dough by rounded Tbsp.ful 2 in. apart onto prepared cookie sheets. Bake for 10 to 12 min. or until cookies are lightly browned. Do not overbake.
Cool 2 min. Remove cookies to foil to cool.
Makes approximately 2 1/2 dozen cookies
