Apricot Cheese Wafers1/2 C. margarine, softened 3 oz. cream cheese, softened 1/2 C. sugar 1 C. flour 1/2 C. dried apricots, finely chopped With an electric mixer cream margarine and cream cheese. Gradually add sugar and continue beating until fluffy. By hand, stir in the flour and apricots; mix until combined. Shape the dough into four or five logs about 1-in. in diameter. Wrap each log in wax paper. Chill for three or more hr.. Cut dough into 1/4-in. slices. Place an in. apart on an unprepared cookie sheet. Bake at 350 degrees F for 8 to 10 min. Cool on a wire rack. Makes approximately seven dozen.
