Recipe For Cooking Cherry Garcia Cookies

Toaster Oven Cookies :: Drop Cookies


Cherry Garcia Cookies

2 C. dried cherries
2/3 C. cherry brandy
1 C. butter, softened
1 C. sugar
1 C. packed light brown sugar
2 eggs
1 Tbsp. vanilla extract or flavoring
1/2 tea. almond extract or flavoring
1/2 tea. salt
1 tea. baking soda
3 C. flour
1 1/2 C. white chocolate, coarsely chopped
1 C. semisweet chocolate, coarsely chopped
1 C. macadamia nuts, coarsely chopped

Preheat oven to 350 degrees F. Line two cookie sheets with parchment paper.

Plump dried cherries by covering with cherry brandy and let sit overnight or microwave enough to warm them and let them sit for 20 to 30 min.

Cream the butter with the granulated and brown sugars. Blend in egg, vanilla extract or flavoring and almond extract or flavoring.

Fold in salt, baking soda and flour. Fold in cherries and brandy, white and dark chocolate and macadamia nuts. Batter should be soft.

Drop in generous Tbsp. onto cookie sheet, leaving space between dollops of batter.

Bake until lightly browned around edges - 12 to 14 min.
