Recipe For Cooking Chocolate Mudslide Cookies

Chocolate Mudslide Cookies
4 oz. unsweetened chocolate, chopped
12 oz. bittersweet chocolate, chopped
1/4 C. (1/2 stick) unsalted butter
4 whole eggs
1 1/2 C. sugar
1 Tbsp. brewed coffee
1 Tbsp. vanilla extract or flavoring
1/2 C. cake flour
1 tea. baking powder
1/2 tea. salt
16 oz. chocolate chips
1/2 C. walnuts
Preheat oven to 350 degrees F. Grease a cookie sheet or line with parchment paper.
Combine unsweetened chocolate, bittersweet chocolate and butter in top pan of double boiler. When completely melted, continue to cook, adding eggs, sugar, coffee and vanilla extract or flavoring. Mix well until smooth. Remove from heat.
Sift together flour, baking powder and salt; gradually fold into wet mixture. Fold in chocolate chips and walnuts. Drop lrg. spoonsful onto parchment or prepared cookie sheet. Bake for 15 to 20 min. or until dough is firm and set to touch. Remove from sheet and cool on racks.
Makes approximately: About 2 dozen lrg. cookies
