Pumpkin Chocolate Chip Cookies

1 C. canned pumpkin (not pie filling)
1 C. sugar
1/2 C. canola oil
1 egg
2 C. flour
2 tea. cinnamon
1/2 tea. salt
1 tea. baking soda plus 1 tea. milk
1 C. semisweet chocolate chips
1 tea. vanilla extract or flavoring
1/2 C. nuts (optional)

Preheat oven to 357 degrees F.

Combine pumpkin, sugar, canola oil and egg.

Stir together flour, cinnamon and salt. Mix all together along with 1 tea. baking soda dissolved in 1 tea. milk. Mix. Add chocolate chips, vanilla extract or flavoring and nuts, if desired. Drop by tea. onto a cookie sheet. Bake for 10 to 12 min., being careful not to overbake.
