Recipe For Cooking Corn Dodgers

Toaster Oven Biscuits :: Savory Biscuits


Corn Dodgers

2 C. yellow cornmeal
2 Tbsp. butter or margarine
1/2 tea. salt
1 Tbsp. sugar
2 C. milk
1 tea. baking powder

Preheat oven to 400 degrees F.

Cook cornmeal in a saucepan with butter, salt, sugar and milk until the mixture comes to a boil. Turn off heat, cover, and let stand 5 min. Add baking powder. Spoon the mix onto a prepared cookie sheet in heaping Tbsp.-size balls, then bake. Bake for 10 to 15 min. They are done when slightly brown around the edges.

Cut laterally and fill with honey butter.

Add 2 Tbsp. chopped jalapeƱos to the mix.

Add 1/4 C. shredded sharp Cheddar cheese.
