Toaster Oven Muffins :: Sweet Muffins
2 C. self-rising flour
2 Tbsp. oil
2 C. vanilla ice cream, softened
1 C. blueberries
Preheat oven to 425 degrees F.
Combine flour, egg, oil and ice cream in bowl; beat until smooth. Stir in blueberries. Fill well-prepared muffin C. 3/4 full. Bake for 20 to 25 min. or until brown.
Makes approximately 6 to 8 servings.
