Cappuccino Chocolate Chip Muffins

6 Tbsp. butter, softened
2/3 C. sugar
1/4 C. milk
1 1/2 tea. baking powder
1/2 tea. salt
1 3/4 C. unsifted flour
1 tea. vanilla extract or flavoring
1 lrg. eggs
2 Tbsp. instant coffee dissolved in
    2 Tbsp. boiling water
1 Tbsp. coffee-flavored liqueur (optional)
3/4 C. chocolate chips

Preheat oven to 375 degrees F. Grease a 6-muffin pan.

In a lrg. bowl, beat butter and sugar at med. speed of electric mixer until light and fluffy. Beat in egg, vanilla extract or flavoring, dissolved coffee granules and coffee liqueur until blended.

In med. bowl, combine flour, baking powder and salt. Add flour mixture to butter mixture alternately with milk, beating just until combined. Fold in chocolate chips. Divide batter among muffin pan C.

Bake 25 to 30 min. or until centers spring back when lightly pressed.

Serve warm.
