Recipe For Cooking Fudge Brownie Muffins

Toaster Oven Muffins :: Sweet Muffins

Fudge Brownie Muffins

1/2 C. butter
1/4 C. cocoa
2 lrg. eggs, lightly beaten
1 C. sugar
1 tea. vanilla extract or flavoring
3/4 C. flour
1 tea. ground cinnamon
1/4 C. chopped pecans
1/4 C. semisweet chocolate chips

Melt butter and cocoa together in microwave.

Combine eggs, sugar and vanilla extract or flavoring. Add butter mixture, flour, cinnamon and pecans, stirring just until blending.

Place paper baking C. in miniature muffin pans and spray lightly with vegetable cooking spray. Spoon muffin batter into baking C. and sprinkle each muffin with a few chocolate chips. Bake at 350 degrees F for 13 to 15 min.

Makes approximately 18 to 24 mini muffins.
