Toaster Oven Muffins :: Sweet Muffins
2 1/2 C. flour
1 1/2 tea. baking powder
1 tea. baking soda
1/4 tea. salt
1/2 C. sugar
1 (8 oz.) container vanilla yogurt
2 Tbsp. pure vanilla extract or flavoring
1/4 C. canola oil
1/2 C. milk
1/2 C. toasted and hulled hazelnuts, finely chopped
1 1/2 C. fresh red raspberries
Preheat oven to 350 degrees F. Grease 12 muffin C.
Mix flour, baking powder, baking soda, salt and sugar together and set aside.
In a lrg. mixing bowl, mix together yogurt, eggs, vanilla extract or flavoring, oil and milk. Slowly add the liquid ingredients to the dry ingredients. Mix together until smooth. Mix the hazelnuts into the batter. Fold in the red raspberries. Fill prepared muffin C. 3/4 full and bake for 20 to 25 min. or until golden brown.
Makes approximately 1 dozen muffins.
