Tomato, Potato and Pepper Casserole

1/4 C. olive oil
2 lrg. potatoes, sliced
2 sm. red, yellow or green
    bell peppers, sliced 1/2-in. thick
2 lrg. ripe tomatoes, sliced 1/4-in. thick
2 tea. minced garlic
1/2 tea. each salt, pepper and oregano

Preheat oven to 375 degrees F.

Spread 1 Tbsp. of the oil over the bottom of a shallow 2-qt. baking dish. Layer half of the potatoes, slightly overlapping if necessary. Top with 1 1/4 C. of the peppers, then with 1 1/4 C. sliced tomatoes. Drizzle with 1 Tbsp. of the oil. Sprinkle with 1 tea. garlic and 1/4 tea. each salt, pepper and oregano. Repeat layers using remaining ingredients. Bake, uncovered, 50 min. to one hr., until vegetables are tender.
